Baked Potato and Black Bean Chili

 I love baked potatoes!  I think potatoes have gotten a bad rep lately, with lots of people avoiding them like the plague.  But potatoes have tons of goodness and nutrients like potassium, iron, vitamin c, and magnesium.  Plus, they are a low calorie food that is high in complex carbohydrates, the body's main energy source.

 

I recently came up with this simple way to get my potato fix and still feel good afterwards!  

 

Wrap your potatoes in foil and bake them in the crock pot on low for 6-7 hours or high for 4-5 hours.  

 

Combine 1 can of black beans, 1 can Rotel tomatoes with green chiles, and I 8 oz. can organic tomato sauce in a saucepan.  Add 1-2 tsp. chili powder and 1/4 tsp. garlic salt to season.  Simmer together and serve over baked potatoes.  Top with a dollop of plain greek yogurt, diced red peppers, diced avocados, and shredded cheddar.
