Buffalo Chicken Salad with Homemade Ranch Dressing

 Ever since my son convinced me to go to dinner with him at Buffalo Wild Wings a few years ago, I've been a buffalo sauce fanatic!  I love the spicy, vinegar-y taste and the way it burns the hairs in your nose just a little bit when you inhale!

 

One of my favorite ways to satisfy my buffalo sauce craving is with this salad.  It's super easy to make and it's pretty much loved by all!  I was using store bought ranch dressing until I found a wonderful recipe for homemade ranch on pinterest.  I tweaked the recipe just a little bit to make it slightly more health coach-y.  (You can find the original recipe here.)  I think you're gonna love it as much as I do!

 

Buffalo Chicken Salad

 

Place 4-6 chicken breasts in a crockpot and cover with your favorite buffalo wing sauce.  Let cook on low for 5-6 hours or high for 3-4 hours.

 

Chop romaine lettuce and fresh veggies such as tomatoes, green onions, cucumbers, carrots, etc. (For the salad shown, I used cucumbers and tomatoes from my garden.) 

 

Remove the chicken from the crockpot and dice it up.  Top lettuce and veggies with chicken and add a little of the excess sauce to cover the chicken, if desired.

 

Homemade Ranch Dressing

 

1/2 Tbsp black pepper

2 1/2 Tbsp parsley flakes

1 Tbsp garlic salt

3/4 tsp sea salt

1/2 Tbsp garlic powder

1 1/2 onion powder

3/4 tsp dill weed

 

This will make a dry mix that can be used about 6 times.

 

I Tbsp dry ranch mix

1 cup vegan mayonaise

1 cup buttermilk

3/4 cup plain greek yogurt

1/2 tsp lemon juice

 

Combine all ingredients and mix well.  Serve over salad and enjoy!
