In honor of Meatless Monday, I came up with this super simple but extremely delicious chili recipe. I like my meals to be as healthy as they can be, but I'm also all about simplicity and speed. If i have to spend hours in the kitchen, it's probably not going to happen!
My husband, who is a meat lover, (I think Meat Lover's Pizza was invented just for him) said he didn't even really miss the meat in this chili. That's a pretty good sign that your meat lover will love it as well!
As a note, I call this chili "vegetarian" but I did add a little bit of shredded cheese on top. If you want it to be totally vegetarian, simply omit the cheese. :)
Spicy Vegetarian Crockpot Chili
2 cans organic chili beans
1 can mild Rotel tomatoes w/ green chiles
1 15 oz. can organic tomato sauce
2-3 cloves minced garlic
1 tsp oregano
1/2 tsp cumin
1/4 tsp cayenne pepper
1 Tbsp chili powder
1 cup frozen corn
1/4 cup diced red or green pepper
Place all ingredients in crockpot and cook on low for 4-5 hours or on high for 2-3 hours. If cooking on stovetop, bring all ingredients to a boil, reduce heat, and simmer for 20-30 minutes.
Top with shredded cheese, plain Greek yogurt, and diced red onions, if desired.
