Beet Salad with Balsamic Vinaigrette

 Happy Meatless Monday to you!  Today's salad is one of my favorite ones yet because I love beets and I love vinaigrettes!  I have a feeling you're going to love this one as much as I do!  This would be great served with your favorite crusty bread or a yummy warming soup.  Or just have it all by itself -- it's that good!

 

BEET SALAD WITH BALSAMIC VINAIGRETTE

 

4-6 cups organic mixed greens

1 pkg organic cooked beets (not pickled)

Feta cheese

Chopped walnuts

6 Tbsp organic balsamic vinegar

2 Tbsp extra virgin olive oil

 

Pour olive oil into a skillet and heat on medium. Chop the beets into bite sized chunks and place in pan.  Add balsamic vinegar and sautee the beets for about five minutes. Season beets with sea salt and coarse pepper if desired.

 

Prepare the mixed greens in bowls.  Top with sauteed beets, feta cheese, chopped walnuts, and drizzle with warm balsamic mixture from the pan.  Serve immediately.
