It's almost spring, which means there are warm, sunny days, and then there are days like today that are kind of windy, rainy, and cold. On those kinds of days, I love to make a pot of soup or chili to warm up my bones. So I came up with this incredibly easy way to make white chicken chili in your slow cooker!
The great thing about this recipe is that you can just dump in the ingredients and then get on with your day. When it's time to eat, just add the cheese and top with sour cream or plain yogurt and a few green onions. Couldn't be any easier. And it's yummy too!
White Chicken Chili
Add the following ingredients to your slow cooker in the order listed:
1 small onion, chopped
1 jalapeno, diced
1 10 oz. can organic chicken breast
1 4 oz. can diced green chiles
1 Tbsp taco seasoning or homemade taco mix
1 16 oz. can organic chicken broth
2 cans great northern beans, drained and rinsed
Cook on high for 2-3 hours or on low for 5-6 hours. When ready to serve, add:
1 1/2 cups organic shredded mexican blend cheese
Top with a plain greek yogurt and chopped green onions, if desired.
Serves 3-4 people. If you have a large family, you'll want to double this recipe. :)
